Artichoke Chicken

Artichoke Chicken - Amanda Bibb -
4-6 servings

2 15oz Cans Artichoke Hearts, drained and chopped
1 1/4 Cup Grated Parmesan Cheese
1 1/4 Cup Mayonnaise
1 tsp Salt
Salt & Pepper to taste

4 Large Skinless Boneless Chicken Breasts

1. Preheat oven to 375F.
2. Mix together all ingredients except the chicken.
3. Pound chicken to uniform thickness (1/4-1/2 inch thick)
4. Place chicken in a single layer in a greased baking dish.
5. Lightly salt and pepper the chicken.
6. Cover chicken with Artichoke mixture.
7. Bake uncovered for 30 minutes or until chicken is done.
8. Serve with rice, linguine, or egg noodles.
