Artichoke Chicken

Artichoke Chicken - Amanda Bibb -

2 15oz Cans Artichoke Hearts, drained and chopped
1 1/4 Cup Grated Parmesan Cheese
1 1/4 Cup Mayonnaise
1 tsp Salt
Salt & Pepper to taste

4-6 Skinless Boneless Chicken Breasts

1. Preheat oven to 375F.
2. Mix together all ingredients except the chicken.
3. Pound chicken to uniform thickness (1/4-1/2 inch thick)
4. Place chicken in a grease baking dish.
5. Cover chicken with Artichoke mixture.
6. Bake uncovered for 30 minutes or until chicken is done.
7. Serve with rice, linguine, or egg noodles.
