Baked Basil Chicken

INGREDIENTS
4 lbs Bone-In Chicken Wings and/or Thighs with skin
4 oz. Basil Leaves, stems removed
5 Garlic Cloves
1 tsp Hot Pepper Flakes (optional)
1/2 tsp Salt
1/2 Yellow Onion quartered
4 Rosemary Sprigs
1 cup Extra Virgin Olive Oil


METHOD
1. Preheat oven to 400°F and place rack in middle position.
2. Salt and pepper the chicken thoroughly.
3. Add the basil, garlic, hot pepper flakes, salt, and olive oil into a blender. Blend until smooth and a consistency of a pesto sauce.
4. Place the chicken thighs and/or wings into a large bowl.
5. Pour the basil sauce over the chicken and mix (with your hands) until the chicken is fully coated with the sauce.
6. Add the chicken thighs and/or wings, to a baking pan. Sprinkle the onion and rosemary on top.
7. Place the baking pan in the oven for 30 minutes.
8. After 30 minutes, flip the chicken over and continue to bake for another 30 minutes or until no longer pink in the center and the juices run clear.
9. If you like it more crispy, broil for a few minutes with the rack in the highest position.


HOW TO SERVE
Serve with a side salad, risotto or lemon pasta.
