Beef Chop Suey

Beef Chop Suey - Betty Wilson
4 servings. We usually DOUBLE IT.

2 Tbsp Vegetable Oil
3/4lb Ground Beef
3 Celery Stalks, sliced diagonally
1 Large Onion, cut in wedges
1 Green Pepper, sliced into strips
1 8oz Can Bamboo Shoots
1 Large Clove Garlic, minced or pressed
1 tsp Salt
1/8 tsp Pepper

2 Tbsp Corn Starch
1 1/3 Cup Water
4 Tbsp Soy Sauce

1. Warm the Vegetable Oil in a large shallow saucepan on medium heat.
2. Add Beef, Celery, Onion, Green Pepper, Bamboo, Garlic, Salt, and Pepper. Cook until Beef is done, stirring often.
3. When Beef is done, mix the Corn Starch, Water, and Soy Sauce together in a small bowl or cup.
4. Add the Soy Sauce mix to the pan and reduce heat.
5. Keep stirring until mixture is thickened.

Serve over rice.

Add whatever ingredients you like to this. Try, 1 15oz Can Baby Corn, 1 8oz Can Water Chestnuts, Some Straw Mushrooms, whatever.
