Beef Chop Suey

Beef Chop Suey - Betty Wilson
4-5 servings

INGREDIENTS
2 Tbsp Corn Starch
1 1/3 Cup Water
5 Tbsp Soy Sauce

2 Tbsp Vegetable Oil
1 lb Ground Beef/Turkey/Pork
2-4 Large Cloves Garlic, minced or pressed
1 tsp Salt
1/8 tsp Pepper

Any or all of the following:
3 Celery Stalks, sliced diagonally
1 Large Yellow Onion, cut in wedges
1 Green Pepper, sliced into strips
4-6 oz Snow Peas
1 8oz Can Bamboo Shoots
Bunch of bean sprouts
1 8oz Can Water Chestnuts
1 15oz Can Baby Corn
1 15ox Can Straw Mushrooms


METHOD
1. Mix the Corn Starch, Water, and Soy Sauce together in a small bowl or cup.
2. Warm the Vegetable Oil in a large shallow saucepan on medium heat.
3. Add the beef and brown.
4. Once the beef has just started to brown add Garlic, Salt & Pepper, and any of the optional ingredients listed. Cook until Beef is done and veggies are desired tenderness, stirring often.
5. When Beef is done, add the Soy Sauce mix to the pan and reduce heat.
6. Keep stirring until mixture is thickened.


HOW TO SERVE
Serve over rice.
