Black Beans Cubano - Betty Wilson

INGREDIENTS
3 Tbsp Olive Oil
1 Large Green Pepper, chopped
2 Cloves Garlic, minced or pressed
2 15oz Cans Black Beans
1/2 tsp Oregano
3 Tbsp White Vinegar
Salt & Pepper to taste
METHOD
1. Warm a large shallow saucepan on medium heat.
2. When the pan is warm, add Olive Oil.
3. When the Olive Oil is aromatic, add the Green Pepper and Garlic.
4. Sauté until wilted.
5. Add all other ingredients and cover.
6. Reduce heat and simmer to warm the beans.
7. Salt and pepper to taste.
HOW TO SERVE
Serve over rice.
