BLT Pasta

BLT Pasta - Grant Wilson Original

1 Tbsp Olive Oil
3 Cloves Garlic, minced or pressed
12oz Thick-Cut Bacon, cut down the middle long ways and then into lardons (NOT MAPLE FLAVOR)
1/2 tsp Pepper
1/2 Cup Mayonnaise
2 Large tomatoes, chopped 1/4"
1 Tbsp Fresh Parsley, chopped (OR 1 tsp Dried Parsley)
1 tsp salt
1 lb Rotini or Elbow Pasta

1. Warm a non-stick frying pan on medium heat.
2. When the pan is warm add the Olive Oil.
3. When the Olive Oil is aromatic, add the Garlic, Bacon, and Pepper. Stir well.
4. Cook, stirring often, until Bacon is firm but not crispy.
5. When the Bacon is done, remove from heat to a paper towel to remove grease.
6. When Pasta is done, drain and return to its pot.
7. Add Bacon mix and Mayonnaise. Mix thoroughly.
8. Add Tomatoes, parsley, and salt and stir well.

Serve with an Italian Side Salad to get the "L" in "BLT".
