Blue Bayou Potatoes

INGREDIENTS
1 Yellow Onion, Julienned
1 Tbsp Butter
5 lbs Potatoes, peeled and sliced thin
1 1/2 Cups Heavy Cream
1 Tbsp Salt
1/4 Tbsp Fresh Ground White Pepper
1/4 Tbsp Fresh Thyme Leaves
1 Tbsp Garlic Finely Chopped
2 Tbsp Canned Jalapeno Pepper, minced
1/2 Large Chicken Bouillon Cube
1/2 cup Grated Parmesan Cheese


METHOD
1. Preheat oven to 350F
2. Butter a baking dish
3. Saute onions with butter until caramelized.
4. Mix sliced potatoes, and caramelized onions in a large mixing bowl.
5. In a separate bowl, mix cream, garlic, salt, white pepper, jalapenos, chicken base and thyme leaves and blend until smooth.
6. Pour blended mixture over potatoes and onions and mix.
7. Pour the whole mix into the baking dish and cover with lid or foil.
8. Bake for 2 hours or until potatoes are tender.
9. Remove potatoes from oven and sprinkle with parmesan cheese.
