Chicken Fajitas
serves 6
INGREDIENTS
1 stick Butter
3 Boneless skinless Chicken Breasts, cut into approx. 1/2" by 3" slices
1 Red Bell Pepper, sliced 1/4-1/2 inch
1 Green Bell Pepper, sliced 1/4-1/2 inch
1 Yellow Bell Pepper, sliced 1/4-1/2 inch
(OR any combination of bell peppers you like)
1 large onion, sliced 1/4-1/2 inch
1 tsp Salt
Pepper
Tortillas
METHOD
1. In a large skillet, melt the butter over medium heat.
2. Once the butter has melted, add all ingredients and stir to combine.
3. Cover and let cook, stirring often until chicken is done and veggies are tender to your liking.
HOW TO SERVE
Serve in tortillas, on rice, or alone. Whichever way, top with sour cream and cilantro.
