Chocolate Tiramisu - Grant Wilson
INGREDIENTS
2 Eggs, separated yolks and whites
1 1/4 Cup Granulated Sugar
1 2/3 Cup Mascarpone
2 Boxes Pavesini Cookies (Lady Finger Cookies)
1 Cup Prepared Hot Chocolate
Unsweetened Cocoa
METHOD
The Cream
1. Add the Sugar to the Egg Yolks and beat thoroughly.
2. In a separate bowl, beat the Egg Whites.
3. Add the Mascarpone to the Egg Whites and whip thoroughly.
4. Gently fold the Mascarpone mix into the Egg Yolk Mix until combined.
Assembly
1. Dip the Cookies into the prepared Hot Chocolate. Do it quickly so they don't get to soggy, but make sure the whole cookie is touches the Hot Chocolate.
2. Cover the Bottom of an 8"x8" pan with the dipped Cookies.
3. Pour some of the cream on top of the cookies in the pan until the cookies are barely covered.
4. Repeat this process until the cream is gone.
5. Dust the top with Unsweetened Cocoa.
6. Refrigerate for at least 30 minutes before serving.
