Fried Rice

INGREDIENTS
3 Cups Cooked Rice
3 Eggs, yolks separated
2 Tbsp Butter, divided
2 Tbsp Vegetable oil, divided
1 Carrot, diced fine
1 Onion, diced fine
1/2-1 lb protein of your choice (sliced chicken breast, diced hot dogs, ground chicken, sliced or ground pork, etc.)
1/2 tsp Salt
1 15oz Can Green Peas
1 Bunch of Scallions, sliced fine
Salt & Pepper
Soy Sauce


METHOD
1. Break up the left over rice.
2. Separate the Egg yolks from the whites.
3. Beat the yolks. Separately beat the whites. Set aside.
4. Mix the yolks together and add to the rice. Mix to combine thoroughly. Set aside.
5. Melt 1 Tbsp Butter in 1 Tbsp vegetable oil in a non-stick frying pan on medium heat.
6. Add the Onion and Carrot to the oil and sauté until until onions start to become transparent.
7. Add your protein and sauté until protein is just cooked.
8. Add the Peas, Salt, and some pepper and continue to sauté for another minute.
9. Remove everything to a plate and set aside.
10. Add the other 1 Tbsp of Butter and Oil to the pan.
11. Once heated, add the Rice/Egg mix to the pan. Spread it around so that as much of the rice is touching the pan as possible.
12. After a minute or so, stir the rice around to ensure all of it gets fried.
13. Once the rice is "dry", reduce heat to low and pour in the beaten egg whites. Fry them stirring constantly until the rice grains become distinct.
14. Return the vegetable and protein mix to the pan with the rice, followed by the Scallions.
15. Season with Soy Sauce to taste.


VARIATION
Try adding diced Cucumber between step 7 and 8.
