Garlic Butter Rice

INGREDIENTS
4 Tbsp Butter, divided
1/3 Cup diced Yellow Onion
2 Tbsp minced or pressed Garlic
2 Cups Uncooked Jasmine Rice
3 Cups Chicken Broth
1-2 Tbsp chopped Parsley
Salt & Pepper


METHOD
1. Melt 2 Tbsp Butter in a deep medium sized saucepan on medium low heat.
2. Once butter has melted, add the diced Onion. Sauté until just soft (around 3 minutes).
3. Add the minced Garlic. Sauté for 30-45 seconds.
4. Add the Rice. Stir to thoroughly coat the rice.
5. Add the Chicken Broth, stir to combine. Bring it up to a simmer.
6. Once simmering, reduce heat to low, cover to pan and let simmer for 15-17 minutes until all the broth is absorbed by the rice.
7. Once liquid is all gone, remove from heat and let rest 5-6 minutes.
8. Stir in the remaining 2 Tbsp Butter.
9. Season with Parsley, Salt, and Pepper.
