Garlic Mushrooms

INGREDIENTS
Extra Virgin Olive Oil
1 lb Mushrooms, larger ones cut into halves or quarters
1 cup Red Onion diced
1 Tbsp Thyme and Rosemary freshly chopped
1 Tbsp Garlic minced
1 Tbsp Lemon Juice freshly squeezed
2 oz White Wine, White Vermouth or Chicken Stock
2 Tbsp Parsley freshly chopped
1 Lemon zest
2 Tbsp Sweet Butter
Salt and Pepper to taste


METHOD
1. In a sauté pan, heat a couple tablespoons olive oil.
2. When hot add the mushrooms, salt and pepper to taste.
3. Cook until golden brown. Add more olive oil if it gets too dry.
4. Once browned, add the onion and cook for a couple more minutes.
5. Add the thyme, rosemary and garlic.
6. When the garlic is fragrant, add the lemon juice and the wine and let it reduce for a couple more minutes.
7. Add the parsley and the lemon zest.
8. Add the butter. Stir as butter melts.
9. Once the butter has melted, remove from heat and serve.
