German Chicken Pancake
INGREDIENTS
1 frozen chicken breast or 1/2 lb ground chicken
2 potatoes
200 g (7 oz. ) Mozzarella cheese or any type of cheese
1 Shallot, diced fine
1 Egg
1/2 tsp salt
1/4 tsp pepper
1/2 tsp Oregano
2 tbsp Olive oil
1 tbsp butter (optional)
Parsley (optional)
METHOD
1. If using frozen chicken breast, grate the chicken breast using a large cheese grater.
2. Place the chicken in a large bowl.
3. Peel the raw potatoes and grate them as well.
4. Wring as much moisture out of the grated potatoes as possible. Add them to the bowl.
5. Grate the cheese and place it in the bowl.
6. Dice the shallot and add it to the bowl.
7. Add the egg, oregano, salt, and pepper to the bowl and mix thoroughly with your hands.
8. Add the oil and butter to a large non-stick pan. on medium-low heat.
9. Once the butter has melted, add the chicken mixture to the pan and shape it into one large patty as wide as the pan.
10. Cover and simmer on low for 15-17 minutes.
11. While the chicken is cooking, chop up the fresh parsley and set it aside for garnish later.
12. After 15-17 minutes, remove the cover of the frying pan. Place a large plate upside down on top of the chicken pancake and flip it over onto the plate. Or try using two spatulas.
13. Slide the chicken pancake off of the plate back into the pan so that it is cooking on the opposite side it was before.
14. Cover and simmer on low for another 15 minutes.
15. Slide the pancake out of the pan onto a large plate or cutting board.
16. Garnish with parsley.
17. Cut into wedges like a pizza and enjoy!
