Honey Chicken
INGREDIENTS
3 chicken breasts
Salt and pepper
60 g flour (1/4 cup)
3 1/2 tbsp butter
2 1/2 tbsp olive oil
4-5 garlic cloves, pressed or minced
1 1/2 tbsp apple cider vinegar
1 tbsp soy sauce
1/3 cup honey (or maple syrup, or Hickory Syrup)
Chives (optional)
METHOD
1. Slice the chicken breasts in a harlequin pattern WITHOUT slicing all the way through the breasts.
2. Season the breasts with salt and fresh ground pepper.
3. In a non-stick frying pan, add 3 Tbsp of butter and olive oil on medium-high heat.
4. As pan is heating up, place the flour on a plate or in a shallow bowl.
5. Dust the chicken breasts with flour. Shake off any excess.
6. Place the coated breasts in the pan smooth side down.
7. Cook for 3 minutes then flip and cook for 2 minutes.
8. Turn heat down to medium and flip the breasts so the cut side is up.
9. Add the remaining 1/2 Tbsp butter. Let it melt.
10. Once melted, add the garlic. Stir well and let it simmer for 30-60 seconds or until it just begins to turn golden.
11. Add honey, soy sauce, and apple cider vinegar. Simmer for 1 minute or until slightly thickened.
12. As the sauce thickens, tilt the pan slightly and baste the breasts.
13. Sprikle with chives and serve.
