Lemon Squares

Lemon Squares - Grant Wilson

1 Cup Flour
1/2 Cup Unsalted Butter
1/4 Cup Powdered Sugar
2 Eggs
1 Cup Granulated Sugar
1/2 tsp Baking Powder
1/4 tsp Salt
2 Tbsp Fresh Lemon Juice
2 Tbsp Lemon Rind (if desired)

1. Heat oven to 350F
2. Mix Flour, Butter, and Powdered Sugar together thoroughly in a bowl.
3. Press the crust mixture into an 8x8 baking pan, building up 1/2" edge.
4. Bake the crust mixture for 20 minutes.
5. Add cracked Eggs, Granulated Sugar, Baking Powder, Salt, Lemon Juice, and Lemon Rind to another bowl.
6. Beat well until light and fluffy. (about 3 minutes)
7. When the crust is done baking, remove it from the oven but keep the oven on.
8. Pour the Egg mixture over the hot crust.
9. Return pan to the oven and bake for 25 minutes.
10. The it's done, let it cool thoroughly, then place in fridge to chill.
