Mandarin Orange Salad - Betty Wilson
INGREDIENTS
1/4 Cup Sliced Almonds
1 Tbsp & 1 tsp Granulated Sugar
1/4 Head Iceberg Lettuce, chopped
1 Head Romain Lettuce, chopped
1 Cup Celery, chopped
1 11oz Can Mandarine Orange Slices, drained
Dressing
1/4 Cup Vegetable Oil
2 Tbsp Granulated Sugar
2 Tbsp White Vinegar
1 Tbsp Fresh Parsley, chopped, or 1/2 Tbsp dried
1/2 tsp Salt
2 Shakes Pepper
2-3 Drops Hot Sauce
METHOD
Almonds
1. Place a non-stick pan on medium low heat.
2. Mix Almonds and Sugar together in a bowl, them place on the pan.
3. Stir the mix together until the sugar has melted.
4. Sprinkle droplets of water on it if needed. DO NOT LET IT BURN.
5. Remove to a plate to cool.
6. Once cool, break them up.
Dressing
1. Place all of the "Dressing" ingredients in a shakable container and shake vigorously.
Assembly
1. Place the Lettuces and Celery in a large salad bowl and toss.
2. Add Mandarin Oranges and toss.
3. Add Dressing and toss.
4. Add Almonds and toss.
5. Serve immediately.
