Marinated Mushrooms

Marinated Mushrooms - Betty Wilson
Double, triple, quadruple, etc. as desired.

INGREDIENTS
3 4oz Cans of Mushroom Buttons, drained
1/3 Cup Red Wine Vinegar
1/3 Cup Vegetable Oil
3-4 Boiler Onions, peeled and sliced into rings
1 tsp Salt
2 tsp Dried Parsley
1 tsp Prepared Yellow Mustard
1 Tbsp Brown Sugar


METHOD
1. Place all ingredients into a large saucepan. Mix well.
2. Bring to a boil.
3. Reduce heat and simmer for 10 minutes, stirring occasionally.
4. Chill in the fridge for several hours, overnight if possible, stirring occasionally.

5 TIMES VARIANT FOR CHRISTMAS:
15 4oz Cans of Mushroom Buttons, drained
1 2/3 Cup Red Wine Vinegar
1 2/3 Cup Vegetable Oil
10-12 Boiler Onions, peeled and sliced into rings
5 tsp Salt
1/4 Cup Dried Parsley
5 tsp Prepared Yellow Mustard
5 Tbsp Brown Sugar
