Mayonnaise

INGREDIENTS
2 egg yolks
1 Tbsp fresh lemon juice
1 Tbsp white wine vinegar
3/4 tsp salt
1/8 tsp sugar
1 tsp Dijon mustard
1 cup vegetable oil
1/2 cup olive oil


METHOD
1. Place the egg yolks into the bottom of a tall slender container.
2. Gently add the remaining ingredients so at to ensure the YOLKS STAY ON THE BOTTOM.
3. Insert an immersion/stick blender into the mixture all the way to the bottom to whip only the yolks.
4. Making sure to start with the yolks, pulse the blender in short bursts until it turns white and creamy.
5. Continue to blend in bursts while allowing the blender to take in a little more oil.
6. Continue until all of the ingredients are emulsified together.
7. Store in the fridge.
