Melted Onions

INGREDIENTS
3 white onions
1 3/4 TBSP prepared Rosemary Salt
8 oz cold unsalted butter cut into cubes
water to maintain juice in a pot


METHOD
1. Slice the onions thin.
2. Place the sliced onions in a large bowl and add the Rosemary Salt. Mix thoroughly with your hands until the onions start to release their moisture.
3. Place the onions in a large sauté pan on low heat for 1:15 hours, stirring regularly. Make sure the bottom of the pan is never dry. We want the onions to soften, not sauté. The onions will release their own water, but if the bottom of the pan starts to get dry, add 1/4 cup of water, as needed.
4. After 1:15 hours, make sure there is liquid in the bottom of the pan, and the heat is on low.
5. Add the cold unsalted butter slowly, 4 cubes at a time. Stir gently to combine.
6. Keep stirring gently, adding the butter until it is all melted and incorporated.
7. remove from heat and serve.


_HOW TO SERVE__
Serve a a Thanksgiving side, or as a topping for steak.
