Oatmeal Cookies

INGREDIENTS
3/4 Cup Shortening
1 Cup Brown Sugar, firmly packed
1/2 Cup Granulated White Sugar
1 Egg
1/4 Cup water
1 tsp Vanilla
1 Cup Flour
1 tsp Salt
1/2 tsp Baking Soda
3 Cup Quick Oats, uncooked

Optional Ingredients
1 Cup Butterscotch Chips
1 Cup Chocolate Chips
1 Cup Nuts
1 Cup Coconut Flakes


METHOD
1. Preheat oven to 350F.
2. In a large mixing bowl add Shortening, Brown Sugar, Granulated Sugar, Egg, Water, and Vanilla. Beat together until creamy.
3. Add Flour, Salt, and Baking Soda. Mix well until thoroughly combined.
4. Add Oats. Mix well until thoroughly combined.
5. Add any one or more of the optional ingredients. Mix well until thoroughly combined.
6. Line 2 cookie sheets with parchment paper.
7. Take a heaping Tbsp of the dough and add it to the cookie sheet, making 12 cookies.
8. Bake for 11-12 minutes, or until lightly golden around the edges.
9. Repeat steps 7 & 8 until dough is gone.
10. Let rest on the pan for 2 minutes, then remove to a cooling rack.
