Peach Crisp
INGREDIENTS
8 Cups fresh, frozen or canned sliced peaches
1/2 Cup granulated sugar
2 Tbsp corn starch
1 1/2 Cups rolled oats
1/2 Cup flour
1/2 Cup brown sugar, lightly packed
1/2 Cup cold butter, cubed
METHOD
1. Preheat oven to 350F.
2. Add peaches, sugar, and cornstarch to an 8x8" or 9x9" baking dish.
3. Stir together until peaches are evenly coated.
4. In a medium bowl, combine oats, flour, brown sugar, and cold butter.
5. Mix together with a pastry cutter, fork, or your hands until well combined. It should resemble cookie dough and easily hold together when pressed.
6. Crumble oat mixture over the fruit mixture in the pan and press down slightly.
7. Bake for 30-50 minutes until oats are golden brown and filing is thick and bubbly at the edges. (A crisp made with fresh fruit will cook more quickly than one made with frozen fruit.)
8. Remove from oven when done and let cool slightly before serving.
HOW TO SERVE
Serve with whipped cream or vanilla ice cream if desired.
