Pot Stickers

Pot Stickers - Reanna Wilson & Honeysuckle

INGREDIENTS

Filling
4 Cups Cabbage, minced (Green Cabbage or Napa Cabbage)
6 Cloves Garlic, minced or pressed
2 tsp Ginger, grated
4-6 Green Onions, minced
2lb Ground Pork
2 Tbsp Salt
4 tsp Granulated Sugar
2 tsp Sesame Oil
Freshly Ground Black Pepper

Sauce
4 Tbsp Soy Sauce
2 Tbsp Rice Vinegar
2 tsp Sesame Oil
2 tsp Chili Garlic Sauce

Other
3 pkgs Potsticker Wrappers
Vegetable Oil for frying


METHOD

The Potstickers
1. In a large mixing bowl, add all ingredients listed under "Filling". Mix thoroughly with your hands until it becomes pasty.
2. Take a wrapper and add 1 tsp of filling.
3. With your finger, wet two adjacent edges of the wrapper.
4. Fold the wrapper corner to corner to make a triangle shape.
5. Turn the triangle upside down. Wet the far side of the right point. Then fold the potsticker, bring the two side points together, sticking the wet far side of the right point to the near side of the left point.
6. Repeat until all the meat filling is gone.
7. Cover the bottom of a large non-stick pan with 1/4 inch of Vegetable Oil and heat on medium heat.
8. When oil is hot, add as many pot stickers as you can without crowding them.
9. Leave them to brown for 1.5 to 2 minutes.
10. When they are browned to your liking, add 1/4 cup water and cover immediately for 3 minutes. (Be careful of steam).
10. After 3 minutes, remove the lid and either remove the pot stickers, OR continue to cook the pot stickers for another 1 minutes, if needed, or until the bottom is crispy again.

Sauce
1. Mix all ingredients listed under "sauce" together thoroughly.
