Pumpkin Pancakes

Pumpkin Pancakes
makes 8+ Pancakes

1 1/2 Cup All-Purpose Flour
1/4 Cup Sugar
1 Tbsp Baking Powder
3/4 tsp Salt
1 tsp Cinnamon
1/2 tsp Ground Ginger
1/2 tsp Allspice
1 Large Egg
4 Tbsp Butter, melted
1 Cup Milk
2 tsp Vanilla Extract
1 Cup Pumpkin Puree

1. In a large bowl combine Flour, Sugar, Baking Powder, Salt, Cinnamon, Ginger, and Allspice. Whisk together and set aside.
2. In a separate bowl combine Egg, Milk, Melted Butter, Vanilla, and Pumpkin Puree. Whisk to combine. (If the butter curdles because some of the ingredients were too cold you can microwave the mixture for a few seconds to a minute.)
3. Pour the wet ingredients into the dry ingredients. Mix together until just combined.
4. Heat a lightly buttered griddle or frying pan over medium to medium-low heat. (If the heat is too high the pancakes will look burnt.)
5. Add about 1/3 cup of batter for each pancake and spread out using a spatula.
6. Cook each side until golden.
