Quick Beef Veggie Soup

Quick Beef Veggie Soup - Betty Wilson

1 Tbsp Olive Oil
1 Medium Onion, chopped
2 Stalks Celery, chopped
1lb Ground Beef or Turkey
2 Qts Water
1 Packet Lipton Onion Soup Mix (or 1 Large Beef Bouillon Cube)
1 15oz Can Tomato Sauce
1 16oz Pkg Frozen Mixed Vegetables (peas & Carrots)
3-4 Yukon Gold Potatoes, diced
Salt and Pepper

1. Warm the olive oil in a large pot on medium low heat.
2. When the oil is warm, add the onions and celery. Sauté until onions start to become transparent.
3. Add the ground meat and brown, stirring regularly.
4. Once the meat is browned, add all other ingredients except the Potatoes.
5. Bring the soup to a boil then reduce heat and simmer for 10 minutes.
6. Add Potatoes and simmer another 10 minutes until Potatoes are tender.
7. Salt and Pepper to taste.
