Quick Beef Veggie Soup

Quick Beef Veggie Soup - Betty Wilson

1lb Ground Beef or Turkey
1 Medium Onion, chopped
2 Stalks Celery, chopped
2 Qts Water
1 Packet Lipton Onion Soup Mix (or 1 Large Beef Bouillon Cube)
1 15oz Can Tomato Sauce
1 16oz Pkg Frozen Mixed Vegetables (peas & Carrots)
3-4 Yukon Gold Potatoes, diced
Salt and Pepper

1. Brown the Ground Meat, Onions and Celery in a large pot on medium heat.
2. Drain off the fat, if you like.
3. Add all other ingredients except the Potatoes.
4. Bring to a boil then reduce heat and simmer for 10 minutes.
5. Add Potatoes and simmer another 10 minutes until Potatoes are Tender.
6. Salt and Pepper to taste.
