Red Curry
INGREDIENTS
1 28oz Can Peeled Whole Tomatoes
3 Tbsp Vegetable Oil
2 Medium Onions, chopped
3 Cloves Garlic, pressed or grated
1 Tbsp Grated Ginger or 1 tsp dried
1 4oz Jar Red Curry Paste
3 lbs Chicken, cubed
3/4 Cup Water
1 14oz Can Coconut Cream/Milk
1 tsp Garam Masala
1.5 tsp Salt
1/2 tsp Black Pepper
METHOD
1. Empty the can of tomatoes into a Tupperware container or a bowl. Carefully crush them by hand. Press the tip of your thumb into the tomato first so that it doesn't explode all over you. Set aside.
2. Add the oil to a large pan on medium heat.
3. Once the oil is warmed, add the onions and sauté until golden, stirring occasionally. Don't let them burn.
4. When onions are golden, add the garlic and ginger. Stir well and let simmer for another 2 minutes.
5. Add tomatoes. Mix thoroughly and let cook 5 minutes, stirring occasionally.
6. Add curry paste. Mix thoroughly, let cook for another 2 minutes, stirring often.
7. Add chicken, salt, and pepper. Cover and cook for 10 minutes, stirring occasionally.
8. Add coconut milk/cream and garam masala. Cook until it slightly thickens.
