Roasted Potatoes
INGREDIENTS
3-5 lbs potatoes, any potato will do, but smaller Russets are the best
4 tablespoons olive oil
2 tsp seasoned salt
2 tsp dried Italian spices OR 2 Tbsp fresh herbs chopped (rosemary, parsley, thyme, etc.)
Salt & Pepper
METHOD
1. Preheat oven to 425°F.
2. Scrub potatoes (do not peel them).
3. Cut potatoes into 1” sized chunks.
4. optional If time allows, soak potatoes in cold water for up to 1 hour. (This removes starch and makes for a fluffier potato). Drain and dry potatoes, if required.
5. Put potatoes into a large bowl.
6. Add olive oil, herbs, and seasonings, and toss/mix well.
7. Line a baking sheet with tin foil.
8. Spread the potatoes out on a baking sheet.
9. Turn over any potatoes that might have their skin only facing up.
10. Sprinkle some Salt and pepper.
11. Bake for 30-35 minutes until browned and tender.
