INGREDIENTS
7 Large Eggs
1 lb Ground Sausage
1 Bunch Green Onions, chopped
2 Cloves Garlic, minced
1 Tbsp Prepared Mustard
Salt & Pepper
1/2 Cup Flour
1/2 Seasoned Bread Crumbs
Vegetable Oil


METHOD
1. Bring a medium pot of water to a boil. Add 5 Eggs and boil for 6 minutes (or longer if you like your eggs harder boiled).
2. Remove from heat and immediately transfer eggs to an ice water bath to cool.
3. Put the Flour in a small bowl, and put the Breadcrumbs in a separate small bowl.
4. In yet another bowl, combine the Sausage, Green Onions, Garlic, Mustard, Salt & Pepper.
5. Peel the cooled Eggs.
6. Roll the Eggs in the flour.
7. Press out the Sausage mixture into patties and wrap them around the floured eggs.
8. Whisk the remaining 2 Eggs together to form an egg wash.
9. Roll your sausage-wrapped Egg in four, then egg wash, and finish in the seasoned bread crumbs. Repeat for each egg.
10. Heat Oil to 300F and fry each Egg for about 3 minutes until browned on all sides.
11. Transfer fried Eggs to a baking tray and finish cooking in a preheated oven for 5 minutes at 400F.
