Spinach Pies

Spinach Pies
makes 4 pies

1 lb plain pizza dough
20 oz frozen chopped spinach, defrosted
1/3 Cup sliced black olives
3 cloves of garlic, minced or pressed
3 Tbsp extra virgin olive oil, plus more to brush on top
6 oz fresh mozzarella, sliced
(Optional- 12 slices pepperoni)

1. Preheat oven to 450ยบ. A hot oven is essential.
2. Drain the spinach and squeeze out any remaining liquid.
3. In a medium bowl, mix spinach, oil, garlic and olives. Add plenty of salt and pepper to taste.
4. On a lightly floured surface, divide dough into 4 pieces.
5. Roll each piece into a rough circle approximately 10 inches wide.
6. Spread 1/4 of the filling in the center of the circle leaving a 1-inch border.
7. Place 1/4 of the cheese (and pepperoni) on top of the spinach.
8. Fold dough in half and seal the edge to create a calzone/turnover shape.
9. Transfer Pies to baking pan.
10. Brush top with olive oil.
11. Bake 8-10 minutes until the top is golden brown.
