Steamed Carrots

INGREDIENTS
5 medium carrots
1 cup water
1/2 teaspoon salt
1 tablespoon granulated sugar

Optional
2 tablespoons unsalted butter
1 tablespoon chopped fresh parsley or chives


METHOD
1. Peel and rinse the carrots.
2. Cut off and discard the ends and slice into thin coins on the diagonal.
3. Put the sliced carrots in a medium saucepan. Add the water, salt, and sugar. Mix well.
4. Place the pan over medium-high heat and bring to a boil.
5. Reduce the heat to medium-low, cover the pan, and cook for about 20 minutes, or until the carrots are tender.
6. Drain the carrots and serve.
7. Optional: Drain the carrots and toss with 2 tablespoons butter and 1 Tbsp chopped parsley or chives, if desired.
