Teriyaki Chicken
INGREDIENTS
1 Cup Soy Sauce
1 Cup Granulated Sugar
2 tsp Brown Sugar
6 Cloves Garlic, pressed
2 Tbsp Fresh Ginger, grated
1/4 tsp Fresh Ground Pepper
1 3-inch Cinnamon Stick
1 small can's worth of Pineapple Juice (2-3 Tbsp)
3 lbs Chicken Thighs, or Breasts, or a combo
2 Tbsp Cornstarch
2 Tbsp Water
2-3 sliced green onions
METHOD
1. Trim most of the fat from the chicken.
2. Place all ingredients except cornstarch and water into a crock pot. Cook on high for 2-3 hours.
3. While it cooks, mix the cornstarch with the water. Set aside.
4. Clean and chop the green onions. Set aside for garnish.
5. After 2-3 hours, once the chicken is done, pour in the cornstarch slurry and mix well.
6. Let the mix thicken.
7. Once thickened it's done.
HOW TO SERVE
Serve over rice and garnish with green onions.
Tip: Because you used the pineapple juice, don't waste the can of pineapple, serve it as a side.
