Tiramisu

Tiramisu
Make this a day ahead

INGREDIENTS
2 XL fresh (organic) eggs
1 250g/8.8oz tub of mascarpone cheese
100g Savoiardi "Lady Finger" cookies
2 TBSP white granulated sugar
1 1/2 cup hot chocolate (prepare earlier and cooled down) (9350ml)
1 dark or milk chocolate bar
Cocoa Powder or powdered Nesquik (less bitter)


METHOD
1. Make the hot chocolate.
2. Once it is done, pour into a bowl and let it cool in the fridge.
3. Once the hot chocolate has cooled, separate 2 egg whites from the yolks, placing them into separate medium mixing bowls.
4. Add one tablespoon of white sugar to each bowl.
5. Mix the egg whites and sugar using a hand mixer until egg whites foam up nicely, (but make sure you don’t overdo it or they will break and curdle.)
6. Mix the egg yolks and sugar using the same hand mixer until creamy.
7. Divide the mascarpone in two equal parts, adding half to the mixture with the egg yolk and the other half to the bowl with the egg white.
8. Using a spatula, gently fold the mascarpone into the bowl of egg whites first.
9. Do the same with the yolks.
10. Get the bowl of hot chocolate out of the fridge.
11. Dip the Lady Fingers into to hot chocolate for no more than 3 seconds, wetting both sides.
12. Lay them down in a tight single layer with the sugar side down.Try to have no gaps and don't break any cookies.
13. If you want to, you can mix the two creams together, egg and yolk. Or you can use them separately. If mixing together, pour half of the mixed cream above each layer of cookies.
13. If not mixing the cream, pour the yolk mixture over the top of the cookies in the pan. Use a spatula to spread it over any gaps.
14. Dust some cocoa or Nesquik powder over the top, so it is completely covered.
15. Grate some dark chocolate over the top.
16. Create another layer of Savoiardi cookies dipped in hot chocolate.
17. Cover the cookies with the egg white mixture.
18. Dust cocoa or Nesquik over the top, and add some grated chocolate once again.
19. Put your Tiramisu in the fridge for at least 2 hours or overnight. 24 hours for best results. The longer you leave it, the better it sets!


VARIATION
It's more traditional to use coffee instead of hot chocolate. Jut be sure to let it cool completely first.
