Zucchini Fritters

INGREDIENTS
4 Zucchini
1 tsp Salt, divided
4 eggs
3 heaped Tbsp Self-Raising Flour
1 heaped Tbsp of Plain Flour
4 heaped Tbsp freshly grated Pecorino Cheese
Sprinkle of pepper
Olive Oil


METHOD
1. Prepare the Zucchini by freshly grating them into a bowl.
2. Add the 1/2 of the Salt to the grated Zucchini. Mix and leave to rest for 10 minutes.
3. Scoop out handfuls of the mixture at a time, squeezing each handful with both hands to remove all the water. Transfer them into a clean bowl as you go.
4. In a separate medium sized bowl, crack the Egg and whisk well.
5. Add 1/2 of the Salt and some Pepper to the Egg mixture, and mix again.
6. Add the Flour, Self-Raising Flour, and Pecorino Cheese to the Egg mixture. Mix thoroughly.
7. Once this is mixed through well, add the Egg mixture to the zucchini and mix thoroughly.
8. Heat up Olive Oil in a medium pan on medium heat.
9. When the Oil is hot, use a tablespoon to scoop out a heap of the mixture and gently drop it into the oil.
10. Cook each side of the Zucchini fritters for just over a minute or until golden brown. If it is turning brown or cooking faster than this, turn down the heat.
11. Remove each zucchini fritters once cooked and transfer it to a plate with paper towels on top to soak any excess oil.


HOW TO SERVE
Transfer the zucchini fritters while still warm on to a serving plate and sprinkle freshly grated Pecorino on top.
